Kenai Riverside Resort – Cook/Chef

We have an opening for a resort cook/chef for the 2024 season. This job originates in Soldotna, Alaska. Lodging and shared transportion will be provided.

Kenai Riverside Resort is an all-inclusive high end glamping operation on the Kenai River in Soldotna, Alaska on the banks of the Kenai River. We operate as a Bed & Breakfast style accommodations with 7 units capable of hosting around approximately 28 guests and around 7-8 guides and staff.

We serve our guests a continental breakfast, to-go sandwich lunch boxes, and a hot dinner daily.

We have an outdoor kitchen, with several barbeque grills, black flattop grills, commercial pizza oven, and commercial deep fryers. Our menu is often “catch of the day” style intermixed with a weekly pizza night and red-meat protein once or twice a week.

We have access to Sysco Restaurant supply for food items, and within a 10 minute drive of several large grocery stores including a super-walmart. So this is not a remote alaska position.

Required Dates: Approximately May 25 to Aug 31. Dates can be somewhat flexible for the right candidate.

Overview:

As our resort cook/chef, you will be planning and cooking healthy, delicious, meals for up to 28 guests and 7-10 staff on a daily basis.

This job is long days. We typically put out the continental breakfast the night before for those with an early morning start and make some basic hot simple breakfasts for those getting a later start for the day.

 

We take most Wednesdays off for dinner service but still have the continental breakfast and to-go lunch boxes on those days. This will be the one day of the week you might often have off, but we plan on 7 days a week.

 

You will be expected to follow resort rules such as no smoking at the resort. If you are a smoker, don’t even bother applying. It’s not a fit. If you are a heavy drinker same thing – not a fit.

 

Your day-to-day

You will be preparing breakfast, to-go lunches, and dinner for approximately 35-40 people. We will have a fixed weekly menu that you will have some opportunity to help design. It will be your responsibility to buy the food, prepare it and maintain the kitchen clean, with the help of staff. As they are available other staff will help do prep work, help prepare lunches, and help with cleanup but you will ultimately be responsible for ensuring smooth operation. It’s fun but at the same time can be chaotic. You will need to keep an open mind and embrace all the challenges with a positive attitude. We need you to be creative and organized.

 

Reporting: You will report to the companies General Manager.

Primary Responsibilities:

  • Estimate food requirements and orders food from suppliers or from our local grocery stores such as Fred Meyer, Safeway, Sysco, Costco etc.
  • Maintains weekly inventory control to ensure efficient operation.
  • Prepares all food items as required.
  • Ensure that food waste is avoided by appropriate planning of menus/recipes
  • Restocks all items.
  • Cleans and maintains kitchen and dining area in practicing good safety, sanitation, and organizational skills.
  • Assists with the cleaning, sanitation, and organization of kitchen, refrigerators, and related kitchen storage and appliances
  • Properly uses and maintains all equipment.
  • Performs all other duties as assigned.

Education and/or Experience:

  • Previous experience within a kitchen setting
  • Solid understanding of professional cooking and knife handling skills.
  • Understanding and knowledge of safety, sanitation and food handling procedures.

Knowledge, Skills, and Abilities:

  • Ability to obtain Food Workers Card http://www.dec.alaska.gov/eh/fss/fwc/fwc_home.html
  • Well-groomed and willing to follow dress requirements.
  • Ability to regularly lift up to 50 lbs.
  • Ability to create, update, and manage menus
  • Must demonstrate a good attitude and the ability to work as a member of a team.
  • Must have a knowledge base to properly use and maintain all equipment.
  • Position requires self-motivation and the ability to work effectively under a minimum of supervision.
  • Must be able to multi-task efficiently, work in a fast-paced environment, and have a strong attention for detail.
  • Understanding of professional cooking and food handling skills.
  • Understanding and knowledge of safety, sanitation and food handling procedures.
  • Work in conjunction with any and all alternate staff to ensure smooth operation
